Eggplant of Nour

DOTE Garden is a physical space in the city of Palermo, conceived and cared for by the collective Aterraterra. It is born out of Listening to Seeds, the third moment in our Year of Listening. You can visit the garden by reading the stories of the seeds that have been planted in it. This is one of the stories.

Dear Fabio and Luca, 
Eggplant has to be one of my favorite vegetables, since my childhood. It’s savory with a hint of sweetness. It reminds me of large family lunches on Sundays in the summer, in the mountains, surrounded by large pine trees and gathered around a long mezze table. The sun, the breeze, and the delicious food that serve as a reminder of home, a melancholic memory I hold onto year after year. Eggplant is the vegetable that fills spaces on my table. I cook it with yoghurt to create a fatteh, I fry it to eat with pita bread and pomegranate molasses. I steam it and crumble it atop a salad, I stuff it and serve it next to rice. In autumn, I prepare to stuff it with walnuts, red pepper, garlic, olive oil and salt so that I can pickle it in jars and it lasts all year long. I hope this eggplant grows in Palermo and transports the stories of Beirut.
